Gyumotsu, a perennial favorite
Specially selected Japanese beef small intestine is carefully prepared and cut to the perfect size for enjoying with soup. Excess intestine wall is carefully trimmed away, producing a motsu (offal) with a soft, yielding texture and unrivaled taste. The beef motsu we use in our motsunabe, our pride and joy, is individually hand-prepared by experts in our head restaurant.

We handle everything from initial offal preparation to cutting ourselves, by hand, so please be aware that it is not always possible to remove each and every beef hair.
Eight years of total commitment to flavor
We have developed Nobunaga-style motsunabe soup through years of countless improvements to our Hakata-style motsunabe soup. Our soy sauce soup is made with the finest soy sauce, made during peak soy season, and our white miso soup is made with white miso from a veteran Kyoto miso maker. Our soup reflects our head chef’s commitment to flavor, painstakingly selecting each individual ingredient. First time customers should start by trying our soy sauce soup, which has our number one repeat order rate!
Famous dishes made with high-quality ingredients
“Nobunaga-yaki” is made from specially selected thigh, a rare cut, of Satsuma Chiran Chicken, known as the “king of chicken,” grilled on a wood fire at 800 degrees. We serve it rare so you can enjoy the refined meat flavor. It’s delicious!
* What is “specially selected thigh?”
Specially selected thigh is a rare cut which is only found in three out of every 100 of the already rare Satsuma Chiran chickens. It’s so fresh it can even be eaten raw!
